Last Friday we had the regular monthly meeting of reading specialists in our school district. We had a potluck lunch, and Gail, one of the other RS, brought this Grape Salad. My niece had made it at Thanksgiving, and I wanted to get the recipe. Gail sent it to me this morning. So here it is. It’s quite good, although I have to admit I’d rather have plain grapes myself.
Sphere: Related ContentGrape Salad
2 lbs. green seedless grapes
2 lbs. red seedless grapes
1 8-oz. pkg. cream cheese, softened
8 oz. sour cream
½ cup white sugar
1 ½ cups shredded cheddar cheese
1 cup chopped pecans
1 cup brown sugar
Wash and pat dry the grapes – leave them whole.  Beat cream cheese until soft. Add sour cream and white sugar, beat until creamy. Gently fold in grapes and cheddar cheese. Pour into large serving dish or bowl. Stir together pecans and brown sugar. Sprinkle over grape mixture; refrigerate overnight.

I was right with you until I saw the brown sugar. Sounds a tad sweet. After all, grapes are used as sweetening.
Carol: It IS too sweet for my taste. However, at the meeting the other day people were going back for second and third servings! I may do a little experimenting and leave out some of the sugar.

I’ll have to show this to my wife…she likes grapes in her salads.
Carol: As I told Norma - people were absolutely raving about this last week - and going back for second and third servings. I am going to try making it with less sugar, though.

I make mine with 1/2 cup sugar and leave out the shredded cheese
Carol: Thanks for the recipe change. I will probably try it that way, but I’ll include the shredded cheese. I love cheese with fruit.

I do this salad without cheese and omit the brown sugar completely. I find it to be completely unnecessary overkill. Everyone loves mine. I also add a drizzle of vanilla to the cream cheese mixture and toast the pecans prior to chopping. It adds a lot if depth and contrast with the sweet grapes.

I tried this recipe but much to sweet for my taste. I was at Central Market and bought a salad that had red & green whole grapes, walnuts and blue cheese that was wonderful. Does anyone have this recipe? Thanks, Nancy
TMS: This recipe IS sweet. The blue cheese salad sounds wonderful. I love blue cheese. I’ll be looking for that recipe.
